- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Line a baking sheet with parchment paper. Drizzle the olive oil over the chicken breasts.
- There are two methods to slice and stuff the chicken:
- First, you can make a horizontal cut in the thicker side of each chicken breast, creating a pocket without cutting all the way through.
- Alternatively, try the hasselback method: make several cuts on the top of each chicken breast without slicing through the entire breast.
- In a bowl, combine the shredded spinach, cream cheese, shredded cheddar, and mozzarella. Stir until well mixed, then stuff this mixture into the chicken breasts.Advertisement
- Season the stuffed chicken breasts with McCormick’s Grill Mates Montreal Chicken Seasoning, kosher salt, and pepper. Sprinkle paprika over the top.
- Place the chicken breasts on the prepared baking sheet and bake for 20-30 minutes. Cooking time will vary based on the thickness of the chicken. Use a meat thermometer to check that the thickest part of each chicken breast reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius).
- Once cooked, slice each stuffed chicken breast in half and serve.
