Prepare the Cheesecake Layer:

  1. Preheat oven to 325°F (165°C). Line the bottom of a 9-inch springform pan with parchment paper.
  2. Beat the cream cheese until smooth. Add sugar and vanilla, and beat until creamy.
  3. Add eggs one at a time, mixing just until combined.
  4. Pour into the prepared pan and bake for 35–40 minutes or until set. Cool completely, then chill in the fridge for at least 2 hours.

Prepare the White Cake:

  1. Preheat oven to 350°F (175°C). Grease two 9-inch cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add egg whites one at a time, then vanilla.
  4. Alternate adding the dry ingredients and milk, starting and ending with flour.
  5. Divide the batter between pans and bake for 25–30 minutes. Let cool completely.

Prepare the Frosting:

  1. In a saucepan over medium heat, combine evaporated milk, brown sugar, and butter. Stir until thickened (about 5–7 minutes).
  2. Remove from heat and stir in vanilla, coconut, and pecans. Let cool.
