When your 92-year-old grandma insists it’s the best version she’s ever had, you save the recipe—and never change a thing. This enchirito-style bake blends classic Tex-Mex flavors into a rich, cheesy, satisfying meal the whole family will ask for again and again.
Ingredients
- 1 lb ground beef
- 1 can (16 oz) refried beans
- 1 packet taco seasoning
- ¼ cup water
- 6 large flour tortillas
- 1 can (10 oz) red enchilada sauce
- 1½ cups shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- Optional toppings: chopped onions, sliced black olives, sour cream
Instructions
Step 1 – Prepare the Beef Filling
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
Add the taco seasoning and water, then simmer for 2–3 minutes.
Stir in the refried beans until fully incorporated and heated through. Remove from heat.
Step 2 – Fill and Roll the Tortillas
Lay out the flour tortillas. Spoon the beef and bean mixture evenly into the center of each.
Roll each tortilla burrito-style and place them seam-side down in a lightly greased baking dish.
Step 3 – Add Sauce and Cheese
Pour the enchilada sauce evenly over the top.
Sprinkle with the cheddar and Monterey Jack cheeses.
Step 4 – Bake
Place the dish in a preheated oven at 375°F.
Bake uncovered for 20–25 minutes, until the cheese is melted and bubbling.
Step 5 – Serve
Spoon extra sauce over each serving.
Add toppings like chopped onions, olives, or a dollop of sour cream if desired.
