Ingredients
For the Brownies:
1 cup sweet potato puree (cooked and mashed)
1/2 cup unsweetened cocoa powder
1/2 cup almond flour (or all-purpose flour)
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup vegetable oil (or melted coconut oil)
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 teaspoon salt
For the Sweet Potato Pie Swirl:
1/2 cup sweet potato puree
1/4 cup granulated sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon milk (or dairy-free alternative)
1/2 teaspoon vanilla extract
Instructions
Set oven to 350°F (175°C) and grease an 8×8-inch baking pan.
In a large bowl, combine all brownie ingredients—sweet potato puree, cocoa powder, flour, sugars, oil, eggs, vanilla, baking powder, and salt. Mix until smooth.
In a separate bowl, blend together sweet potato puree, sugar, cinnamon, nutmeg, milk, and vanilla until smooth.
Spread brownie batter evenly in the pan. Drop spoonfuls of the swirl mixture on top and gently swirl with a knife or skewer.
Bake for 25-30 minutes or until a toothpick comes out with just a few crumbs.
Let cool for 10 minutes, slice, and enjoy!
