Stuffed Mashed Potato Nests – Simple, Hearty & Delicious

For the Potato Nests:

  • 3–5 large potatoes, peeled and cut
  • 3.5 tbsp (50 g) butter
  • A bunch of fresh dill, chopped
  • Salt, smoked paprika, black pepper, oregano (to taste)

For the Filling:

  • 1.1 lbs (500 g) ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 large tomato, diced
  • 2.5 oz (70 g) tomato paste
  • A bunch of fresh parsley, chopped
  • 3.5 oz (100 g) mozzarella cheese, shredded

  1. Prepare the mashed potatoes:
    Boil potatoes until tender. Drain, then mash with butter, chopped dill, salt, paprika, pepper, and oregano. Set aside to cool slightly.
  2. Shape the nests:
    Preheat oven to 375°F (190°C). On a lined baking tray, shape mashed potatoes into small nests (flatten a scoop and use a spoon to create a well in the center).
  3. Cook the filling:
    In a pan, sauté onion and garlic until soft. Add ground beef and cook until browned. Add bell pepper, tomato, tomato paste, salt, and pepper. Simmer for 8–10 minutes. Finish with chopped parsley.
  4. Assemble:
    Spoon the beef mixture into each potato nest. Sprinkle mozzarella cheese on top.
  5. Bake:
    Bake for 15–20 minutes or until the cheese is melted and golden.
  6. Serve:
    Garnish with extra parsley if desired. Serve hot.
