Ingredients :
1 pkg (8 oz) cream cheese, softened.
2 tbsp granulated sugar.
1 tsp vanilla extract.
1 cup heavy whipping cream.
1 cup fresh strawberries, diced.
1 1/2 cups crushed shortbread cookies or graham crackers.
1/4 cup unsalted butter, melted.
6 large crepes or thin cake layers (store-bought or homemade).
Powdered sugar, for dusting.
Directions :
Start with the cheesecake filling by blending the cream cheese, sugar, and vanilla until it is smooth.
In a separate bowl, whip the cream until peaks are stiff, then fold into the cream cheese blend calmly.
Dice strawberries, mix with sugar, and let rest for 10 minutes.
In another bowl, combine crushed cookies with melted butter, forming a wet-sand texture.
Lay the crepe or cake flat, cover with a thin cheesecake layer, then add some shortcake mixture.
Place a strawberry line an inch from the edge, roll up tightly in sushi style.
Cover rolls in plastic wrap and chill for at least an hour.
Once firm, unwrap and slice each roll into pieces, ready to serve.
Arrange nicely on a platter, dust with powdered sugar, and enjoy.
