Strawberry Earthquake Cake

Ingredients:

1 box (15.25 ounces) strawberry cake mix
3 large eggs
1 cup water
1/2 cup vegetable oil
1 package (8 ounces) cream cheese, softened
1/2 cup unsalted butter, melted
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
1 cup diced fresh strawberries
2 cups white chocolate chips

Directions:

Preheat Oven: Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish.

Prepare Cake Batter: In a medium bowl, combine the strawberry cake mix, eggs, water, and vegetable oil. Mix until smooth. Pour the batter into the prepared baking dish.

Add White Chocolate Chips: Evenly sprinkle the white chocolate chips over the cake batter.

Prepare Cream Cheese Mixture: In a large bowl, use a hand mixer to blend the softened cream cheese, melted butter, powdered sugar, vanilla extract, and kosher salt until smooth. Gently fold in the diced strawberries.

Combine Mixtures: Drop spoonfuls of the cream cheese mixture over the cake batter. Use a knife to gently swirl the mixtures together, creating a marbled effect.

Bake: Place the baking dish in the preheated oven and bake for 50-55 minutes, or until the center is set and a toothpick inserted comes out clean.

Cool and Serve: Allow the cake to cool before slicing. For an extra touch, top each slice with whipped cream and additional diced strawberries.
