Ingredients:

For the Caramel:

  • 1 cup granulated sugar
  • 1/4 cup water

For the Flan:

  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • Pinch of salt

Instructions:

  1. Make the Caramel:
    • In a saucepan, combine the sugar and water. Heat over medium heat, swirling occasionally, until the sugar dissolves and turns a golden amber color. Be careful not to let it burn.
    • Quickly pour the caramel into a round baking dish or individual ramekins, tilting to coat the bottom evenly. Set aside to cool and harden.
  2. Prepare the Flan Mixture:
    • In a blender, combine the sweetened condensed milk, evaporated milk, eggs, vanilla extract, and salt. Blend until smooth.
  3. Pour the Mixture:
    • Pour the flan mixture over the hardened caramel in the baking dish.
  4. Bake in a Water Bath:
    • Preheat your oven to 350°F (175°C). Place the flan dish in a larger baking pan and fill the outer pan with hot water, creating a water bath.
    • Bake for about 50-60 minutes, or until the flan is set (a knife inserted should come out clean).
  5. Cool and Serve:
    • Remove the flan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
    • To serve, run a knife around the edges, invert onto a plate, and let the caramel sauce flow over the top.
