Tropical Pineapple Barbecue Meatballs
Ingredients:
1 pound ground beef (or turkey)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
1 clove garlic, minced
1 large egg
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1 cup barbecue sauce
1 cup crushed pineapple (drained)
1 tablespoon soy sauce
Fresh parsley, for garnish (optional)
Directions:
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped onion, garlic, egg, salt, pepper, and smoked paprika. Mix until well combined.
Shape the mixture into small meatballs, about 1 inch in diameter.
Place the meatballs in the slow cooker.
In a separate bowl, whisk together the barbecue sauce, crushed pineapple, and soy sauce. Pour the mixture over the meatballs in the slow cooker.
Cover and cook on low for 4-6 hours or on high for 2-3 hours until the meatballs are cooked through and tender.
Once done, garnish with fresh parsley if desired and serve with toothpicks or over rice.
