SLOW COOKER CHEESY BURGER FLAVORED SOUP

Ingredients

  • 1 lb ground beef (or turkey)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced potatoes (fresh or frozen)
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 tsp Worcestershire sauce
  • 1 tsp mustard (yellow or Dijon)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup milk or heavy cream
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Brown the Meat: In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Combine Ingredients: In the slow cooker, add the browned beef, onion, garlic, beef broth, potatoes, carrots, celery, Worcestershire sauce, mustard, Italian seasoning, salt, and pepper.
  3. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours, until vegetables are tender.
  4. Add Cheese and Cream: About 30 minutes before serving, stir in the cheddar cheese and milk or cream. Allow to heat through until the cheese melts.
