Ingredients:
1 C Rice (cooked according to package)
½ T Oyster Sauce
One pound Shrimp (peeled and deveined, season with a dash of salt)
¼ tsp Mirin
½ pkg of Frozen peas and Carrots
¼ tsp Salt
2 Eggs (beaten)
1 T Canola oil
½ C Soy Sauce
1 tsp Chinese Five Spice
Directions:
1. In a wok or skillet, over Medium heat add oil. When pan is shimmering, add seasoned shrimp and cook for just 2 minutes tops. Remove and set aside.
2. Add peas and carrots to the skillet. Cook for two minutes. Stirring.
3. Next add cooked rice. Fry rice for about 30 seconds then add soy sauce, mirin, Chinese Five Spice and salt. Toss well.
4. Once combined, create an opening in center of wok, pour in eggs. Once set, about 2 minutes, begin to scramble the eggs here with a wooden spoon. Add a dash of salt. When eggs have set add shrimp back to the pan.
5. Toss everything together, continue cooking until shrimp are cooked through. Serve hot! Garnish with Green onions.
