Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.

Step 2: Make the Filling

In a medium bowl, combine the chopped shrimp, lump crab meat, cream cheese, mozzarella cheese, green onion, mayonnaise, garlic powder, paprika, and a pinch of salt and pepper.
Mix until smooth and evenly blended.

Step 3: Assemble the Rolls

Lightly flour your work surface and roll out the puff pastry to smooth it.
Cut the pastry into 4 equal rectangles.
Spoon the seafood mixture along one edge of each rectangle, leaving some space at the border.

Roll the pastry over the filling, sealing the edges by pressing with a fork.
Place rolls seam-side down on the prepared baking sheet.

Step 4: Egg Wash and Bake

Beat the egg and brush it lightly over the tops of the rolls for a glossy finish.
Bake for 18–20 minutes, or until the pastry is golden and puffed.

Step 5: Serve

Allow to cool for 3–4 minutes before slicing into smaller pieces if serving as appetizers.
Best served warm.
