Shrimp and Asparagus Stir-Fry with Mushrooms

Ingredients:


• 1 pound shrimp, peeled and deveined
• 1 bunch asparagus, trimmed and cut into 1-inch pieces
• 1 cup sliced mushrooms
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• ½ teaspoon salt
• ¼ teaspoon black pepper
• 1 tablespoon soy sauce
• 1 tablespoon lemon juice

Instructions:


1. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat.

2. Add shrimp and cook 2-3 minutes until pink and opaque. Remove from pan and set aside.

3. Add remaining olive oil to the pan.

4. Add asparagus and mushrooms, cooking 3-4 minutes until asparagus is tender-crisp.

5. Add garlic, salt, and pepper. Cook for 1 minute more.

6. Return shrimp to the pan.

7. Stir in soy sauce and lemon juice.

8. Serve immediately over rice.
