– 4 cups shredded Swiss cheese, divided
– 1 cup chopped dill pickles
– 1 cup milk
– 6 slices of rye bread, divided
– 2 teaspoons caraway seeds, divided
– 1 pound thinly sliced pastrami or roasted turkey, divided
– 1 14.5-ounce can or jar of sauerkraut, drained well
– 2 teaspoons yellow mustard
– 1 cup creamy dressing (homemade variation of thousand island)
– 3 large eggs, beaten
– 2 slices of rye bread (for breadcrumbs)
Instructions:
1. Preheat your oven to 350°F (175°C). Prepare an 11×7 inch or 9×13 inch baking dish by spraying it with nonstick cooking spray.
2. Prepare the bread: Take 4 slices of rye bread and cut them into 2-inch cubes. Place the cubes evenly in the bottom of the prepared baking dish.
3. Create breadcrumbs: In a food processor, pulse the remaining 2 slices of rye bread until they turn into fine breadcrumbs. Set these aside for later use.
4. Layer the casserole:
– Start by spreading half of the sliced pastrami evenly over the cubed bread.
– Next, layer on the drained sauerkraut and then add the chopped dill pickles. Sprinkle 1 teaspoon of caraway seeds over this mixture.
– Add 2 cups of shredded Swiss cheese on top of the pickles.
5. Add more layers:
– Place the remaining pastrami over the cheese layer and gently press down to compact it.
– Finish the layering process by topping it off with the final 2 cups of shredded Swiss cheese and sprinkle the remaining 1 teaspoon of caraway seeds evenly on top.
6. Prepare the sauce: In a medium bowl, whisk together the milk, beaten eggs, creamy dressing, and yellow mustard until well combined.
7. Assemble and bake: Pour the sauce mixture evenly over the layers in the baking dish. Sprinkle the reserved breadcrumbs over the top. Cover the dish with foil.
8. Bake: Place the baking dish in the preheated oven and bake for 45 minutes or until the casserole is set.
9. Rest and serve: Once done baking, remove the casserole from the oven and allow it to rest for about 5 minutes. Slice into portions, serve warm, and enjoy!
