Ingredients
– 1 cup pumpkin puree
– 1 cup milk
– 3 large eggs
– 1 tablespoon brown sugar
– 1 teaspoon vanilla extract
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 8 slices of thick bread (such as brioche or challah)
– Butter, for frying
Instructions
In a large mixing bowl, whisk together the pumpkin puree, milk, eggs, brown sugar, vanilla extract, cinnamon, nutmeg, and ginger until the mixture is smooth and well combined.
Heat a skillet or griddle over medium heat and add a little butter to melt. Dip each slice of bread into the pumpkin mixture, allowing it to soak for a few seconds on each side. Let any excess batter drip off.
Place the soaked bread slices onto the hot skillet or griddle. Cook for 2-3 minutes on each side, or until golden brown and cooked through. Repeat with the remaining slices, adding more butter as needed.
Serve the Pumpkin French Toast warm with a drizzle of maple syrup, a dusting of powdered sugar, and a sprinkle of additional cinnamon if desired. You can also top it with whipped cream or chopped nuts for extra indulgence.
