Ingredients:
- 300g fresh spinach
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 egg, for filling
- Salt, to taste
- 1/2 tsp black pepper, freshly ground
- 250g ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 puff pastry sheet
- 1 egg, beaten with 1 tbsp milk, for egg wash
- Sesame seeds for sprinkling (optional)
Directions:
- Preparation: Start by preheating your oven to 200°C (400°F) and lining a baking tray with parchment paper.
- Cook Spinach: In a skillet, heat the olive oil over medium heat and sauté the garlic until it becomes fragrant. Add the spinach and cook until it is completely wilted. Season with salt and black pepper, then let the mixture cool slightly.
- Make Filling: In a mixing bowl, combine the cooled spinach with ricotta, mozzarella, and Parmesan cheeses. Stir until the mixture is well blended.
- Assemble Rolls: Unfold the puff pastry on a lightly floured surface. Spread the spinach and cheese mixture evenly across the pastry, leaving a small margin around the edges. Roll the pastry tightly into a log and seal the edges.
- Prepare for Baking: Cut the log into 2-inch slices and arrange them on the prepared baking tray. Brush the tops with the egg wash and sprinkle with sesame seeds if desired.
- Bake: Place in the oven and bake for 20-25 minutes, or until the pastry is puffed and golden brown.
Serving Suggestions: These puff pastry rolls are perfect as an appetizer or a light lunch. Serve them warm for the best texture and flavor, accompanied by a side salad or a dipping sauce such as marinara or a creamy dill sauce.
