Ingredients:

β€’ 4 large potatoes, peeled and grated
β€’ 1 small onion, finely chopped
β€’ 2 eggs
β€’ ΒΌ cup all-purpose flour
β€’ Β½ tsp salt
β€’ ΒΌ tsp black pepper
β€’ Optional: Fresh herbs like parsley, chopped
β€’ Vegetable oil for frying
β€’ Optional: Serve with sour cream or applesauce
Instructions:

Drain the Potatoes:
β€’ After I grate the potatoes, I place them in a clean dish towel and squeeze out as much liquid as possible.
Mix the Ingredients:
β€’ In a spacious bowl, I combine the grated potatoes, chopped onion, eggs, flour, salt, pepper, and optional herbs. I ensure thorough mixing.
Heat the Oil:
β€’ In a large skillet, I heat a thin layer of vegetable oil over medium-high heat.
Form and Fry the Pancakes:
β€’ For each pancake, I spoon a heaping tablespoon of the potato mixture into the skillet. I flatten it with a spatula and fry until both sides are golden brown, approximately 3-4 minutes per side.
Drain:
β€’ I transfer the pancakes to a plate lined with paper towels to drain any excess oil.
Serve:
β€’ I serve the potato pancakes hot and, if desired, accompany them with sour cream or applesauce.
Enjoy your delicious Potato Pancakes!
