Pork Chops with French Onion

Ingredients :

4 bone-in or boneless pork chops
Salt and pepper, to taste
1 tbsp olive oil
2 tbsp butter
2 large onions, thinly sliced
3 cloves garlic, minced
2 tbsp all-purpose flour
1 1/2 cups beef broth
1 tsp fresh thyme (or 1/2 tsp dried thyme)
Fresh parsley, chopped, for garnish

Directions :

Prepare the Pork Chops: Pat pork chops dry with a paper towel, then season generously with salt and pepper on both sides.

Sear the Pork Chops: Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.

Cook the Onions: In the same skillet, add butter and onions. Cook, stirring occasionally, for 8-10 minutes until the onions are golden and caramelized. Add minced garlic and cook for another 1-2 minutes.

Make the Gravy: Sprinkle flour over the onions and stir to combine. Slowly pour in the beef broth, whisking constantly to prevent lumps. Add thyme and simmer until the gravy thickens, about 5 minutes.

Combine: Return pork chops to the skillet, spooning the gravy and onions over the top. Reduce heat to low, cover, and simmer for 10-15 minutes until pork is cooked through.

Serve: Garnish with fresh parsley and serve hot over mashed potatoes or with roasted potatoes on the side. Enjoy!
