Ingredients:
– 1/2 cup creamy peanut butter
– 1/2 cup granulated sugar
– 1/2 cup brown sugar
– 1 egg
– 1 teaspoon vanilla extract
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 36 chocolate kisses, unwrapped
Directions:
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together the peanut butter, granulated sugar, brown sugar, egg, and vanilla extract until smooth.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
Shape the dough into 1-inch balls and roll in additional granulated sugar. Place on the prepared baking sheet.
Bake for 8-10 minutes, or until the edges are set but the centers are still soft.
Immediately press a chocolate kiss into the center of each cookie. Allow the cookies to cool on the baking sheet before transferring to a wire rack to cool completely.
