Ingredients
1 cup creamy peanut butter
4 tablespoons unsalted butter (softened)
1 teaspoon vanilla extract
2 cups powdered sugar
2 cups semi-sweet chocolate chips
2 teaspoons coconut oil (optional, for a smoother chocolate coating)
Instructions
Prepare the Peanut Butter Mixture
In a large mixing bowl, combine the peanut butter, softened butter, and vanilla extract. Mix until smooth and creamy.
Gradually add the powdered sugar, mixing until a firm dough forms.
Shape into Balls
Scoop out small portions of the mixture and roll into bite-sized balls (about 1 inch in diameter). Place them on a baking sheet lined with parchment paper.
Refrigerate for 20–30 minutes, or until firm.
Melt the Chocolate
In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring between each, until smooth.
If desired, stir in coconut oil for a shinier, easier-to-dip coating.
Dip the Peanut Butter Balls
Using a fork or toothpick, dip each chilled peanut butter ball into the melted chocolate, ensuring it’s fully coated.
Place the coated balls back onto the parchment-lined baking sheet.
Set the Chocolate
Let the chocolate coating set at room temperature or refrigerate for about 20 minutes until firm.
Serve and Enjoy
Transfer the peanut butter balls to an airtight container. Store them in the refrigerator for up to two weeks or freeze for longer storage.
