INGREDIENTS:


For the Filling:

6 fresh peaches, peeled, pitted, and sliced
1/2 cup granulated sugar
1/4 cup brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 tbsp cornstarch
1 tsp vanilla extract
1 tbsp lemon juice
For the Cobbler Topping:

1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, cold and diced
1/4 cup boiling water

Vanilla ice cream
DIRECTIONS:


1. Prepare the Filling:

Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced peaches, granulated sugar, brown sugar, cinnamon, nutmeg, cornstarch, vanilla extract, and lemon juice. Toss until the peaches are evenly coated.
Transfer the mixture to a greased 9×13-inch baking dish or individual cast-iron skillets.
2. Make the Topping:

In a medium bowl, mix the flour, granulated sugar, brown sugar, baking powder, and salt.
Add the diced butter and mix with a pastry cutter or your fingers until the mixture is crumbly.
Pour in the boiling water and stir until just combined.
3. Assemble and Bake:

Drop spoonfuls of the topping mixture over the peach filling.
Bake for 35–40 minutes, or until the topping is golden brown and the filling is bubbling.
