ONE-POT ZESTY STEAK PASTA

  • 1 lb steak, thinly sliced (sirloin or flank works well)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 2 ½ cups beef broth
  • 1 (14 oz) can diced tomatoes, with juice
  • 1 tablespoon tomato paste
  • 8 oz penne or rotini pasta
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest (optional)
  • Chopped fresh parsley, for garnish

  1. Heat olive oil in a large deep skillet over medium-high heat.
  2. Season the steak with salt, pepper, garlic powder, and paprika. Sear the steak for 2–3 minutes per side until browned. Remove and set aside.
  3. In the same skillet, add chopped onion and cook until soft, about 3 minutes. Add garlic and cook for 1 more minute.
  4. Pour in beef broth, diced tomatoes, and tomato paste. Stir well, then add the pasta.
  5. Bring to a boil, then reduce heat to a simmer. Cover and cook for 12–14 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  6. Stir in heavy cream and Parmesan cheese. Return steak to the pan and cook for another 2 minutes to warm through.
  7. Add lemon zest if desired and garnish with chopped parsley. Serve hot.
