Ingredients :
2 ripe bananas, mashed
1/4 cup sugar
1 tablespoon cornstarch
1 cup whole milk
1 teaspoon vanilla extract
2 egg yolks
For the French Toast:
8 slices of thick-cut bread (like brioche or challah)
4 eggs
1 cup milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 tablespoons butter
Extra banana slices for garnish
Maple syrup for serving
Instructions :
-Make the Banana Pudding: In a saucepan, combine the mashed bananas, sugar, cornstarch, and salt. Gradually whisk in the milk. Cook over medium heat until the mixture thickens and comes to a boil, stirring constantly. In a separate bowl, whisk the egg yolks, then gradually whisk in half of the hot banana mixture. Return the entire mixture to the saucepan and cook for 2 more minutes, stirring constantly. Remove from the heat and stir in the vanilla extract. Let the pudding cool completely.
-Prepare the French Toast Mixture: In a shallow dish, whisk together the eggs, milk, vanilla extract, and cinnamon.
-Assemble the French Toast: Spread a thick layer of banana pudding on four slices of bread, then top with the remaining slices to form sandwiches. Dip each sandwich into the French toast mixture, turning to coat both sides.
-Cook the French Toast: Heat the butter in a large skillet over medium heat. Add the sandwiches and cook until golden brown, about 2-3 minutes per side. If your skillet isn’t large enough to fit all the sandwiches, cook them in batches.
-Serve: Slice each sandwich in half diagonally, then garnish with extra banana slices and a drizzle of maple syrup. Serve immediately while still warm.
