Ingredients:
– 2 boneless, skinless chicken breasts
– 8 oz bowtie pasta
– 1 cup asparagus, chopped
– 3 cloves garlic, minced
– 1 cup heavy cream
– 1 cup chicken broth (or vegetable broth)
– 1/2 cup grated Parmesan cheese
– 2 tbsp olive oil
– Salt and pepper to taste
– Zest of 1 lemon
– Juice of 1 lemon
– Fresh parsley, chopped (for garnish)
Instructions:
1. Cook bowtie pasta according to package instructions; drain and set aside.
2. In a skillet, heat olive oil over medium heat; season chicken with salt and pepper, then cook until golden and cooked through. Remove and slice.
3. In the same skillet, add garlic and asparagus; sauté until tender.
4. Pour in chicken broth and heavy cream; bring to a simmer.
5. Stir in Parmesan cheese, lemon zest, and juice; mix well.
6. Add cooked pasta and sliced chicken; toss to combine.
7. Garnish with fresh parsley before serving.
Notes:
Feel free to substitute chicken with tofu for a vegetarian option!
