Ingredients:
4 salmon fillets (about 6 ounces each)
Salt and pepper to taste
1/4 cup honey
1/4 cup pineapple juice
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon grated ginger
1/2 teaspoon cornstarch
1 tablespoon water
Pineapple slices and chopped fresh cilantro for garnish (optional)
Directions:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
Season the salmon fillets with salt and pepper to taste, then place them on the prepared baking sheet.
In a small saucepan, combine the honey, pineapple juice, soy sauce, minced garlic, and grated ginger. Bring the mixture to a simmer over medium heat, stirring occasionally.
In a separate small bowl, mix the cornstarch with water to create a slurry. Gradually add the slurry to the saucepan, stirring constantly, until the sauce thickens slightly.
Remove the saucepan from heat and let the honey pineapple sauce cool for a few minutes.
Spoon the honey pineapple sauce over each salmon fillet, coating them evenly.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Once done, remove the salmon from the oven and let it rest for a few minutes.
Serve the Honey Pineapple Salmon hot, garnished with pineapple slices and chopped fresh cilantro, if desired.
Enjoy the delightful combination of flavors in this easy and flavorful salmon dish!
