Hearty Cabbage Roll Soup

Ingredients:
1 lb ground beef
1 onion, chopped
3 cloves garlic, minced
1 small head of cabbage, chopped
1 (14.5 oz) can diced tomatoes
1 (15 oz) can tomato sauce
4 cups beef broth
1/2 cup uncooked rice
1 tsp paprika
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
Fresh parsley for garnish
Directions:
1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
2. Add the chopped onion and garlic to the pot and sauté until softened.
3. Stir in the chopped cabbage, diced tomatoes, tomato sauce, and beef broth.
4. Add the uncooked rice, paprika, thyme, bay leaf, salt, and pepper.
5. Bring the soup to a boil, then reduce the heat and simmer for 25-30 minutes, or until the rice is cooked and the cabbage is tender.
6. Remove the bay leaf, garnish with fresh parsley, and serve hot.
