Ingredients:
Cake:
2 cups all-purpose flour
1 1/2 cups granulated sugar
1 tsp baking soda
1/2 tsp salt
2 large eggs
1 (20 oz) can crushed pineapple with juice
1 tsp vanilla extract
1/2 cup chopped walnuts (optional)
Frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
1/2 cup shredded sweetened coconut (optional for garnish)
1/4 cup chopped pecans (optional for garnish)
Directions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
Mix the Dry Ingredients:
In a large bowl, whisk together the flour, sugar, baking soda, and salt.
Mix the Wet Ingredients:
Add the eggs, crushed pineapple with juice, and vanilla extract to the dry ingredients. Stir until well combined. If desired, fold in the chopped walnuts.
Bake the Cake:
Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
