Grilled Flank Steak with Caprese Salad

INGREDIENTS:

– 1 lb flank steak
– Salt and pepper, to taste
– 2 cups cherry tomatoes, halved
– 8 oz fresh mozzarella, diced
– 1 cup fresh basil leaves, chopped
– 1/4 cup balsamic vinegar
– 1/4 cup olive oil

INSTRUCTIONS:

1. Preheat your grill to medium-high heat. Season the flank steak generously with salt and pepper.
2. Place the seasoned flank steak on the grill and cook for 4-5 minutes on each side for a medium-rare finish. Once done, remove it from the grill and allow it to rest for 5 minutes before slicing.
3. While the steak rests, mix together the halved cherry tomatoes, diced mozzarella, and chopped basil leaves in a large bowl.
4. In a separate small bowl, whisk together the balsamic vinegar and olive oil. Pour this dressing over the tomato and mozzarella mixture, tossing gently to combine.
