Garlic Mushroom Grilled Cheese Sandwich

Ingredients:
1 tablespoon (15 ml) olive oil
250 g mushrooms, sliced
2 tablespoons (30 g) butter
2 cloves garlic, crushed
½ teaspoon chili flakes (optional)
1 teaspoon dried oregano
1 teaspoon lemon juice
Salt and pepper to taste
8 slices sourdough bread
100 g mozzarella cheese, shredded
100 g sharp cheddar cheese, shredded
Additional butter for grilling
Instructions:
Sauté the Mushrooms:
Heat the olive oil in a skillet over medium-high heat. Add the mushrooms and sauté until golden brown, about 5-7 minutes.
Add the butter, garlic, chili flakes, and oregano to the skillet. Cook for an additional 2-3 minutes, or until the mushrooms are well-coated and aromatic.
Season with lemon juice, salt, and pepper. Stir well and set aside.
Prepare the Sandwiches:
In a bowl, mix the mozzarella and cheddar cheeses together.
Place 4 slices of bread on a flat surface. Generously cover each slice with the cheese mixture.
Add a layer of sautéed mushrooms on top of the cheese and cover with another slice of bread.
Grill the Sandwiches:
Spread butter on the outside of the sandwiches.
Heat a skillet over medium heat and place the sandwiches in the pan. Cook until the bread is golden and crispy, and the cheese is fully melted, about 3-4 minutes per side.
Serve:
Remove the sandwiches from the skillet, cut them in half, and serve hot.
