DIRECTIONS
Oil for frying (vegetable or canola) a medium bowl, whisk together the dry ingredients—flour, salt, baking powder, and sugar. In a separate bowl, combine the wet ingredients—egg, milk, and vanilla extract. Slowly add the wet mixture into the dry ingredients, stirring until the batter is smooth and lump-free.a deep skillet or pot, pour oil until it’s about 1 inch deep. Heat it over medium heat until it reaches 350°F (175°C). You can test this by dropping a small bit of batter into the oil; if it sizzles and rises to the top, the oil is ready.
3. Fry the Bites
Using a spoon or small cookie scoop, carefully drop spoonfuls of batter into the hot oil. Fry each batch for 2-3 minutes, flipping halfway through to ensure even browning. The bites should turn golden brown and crispy on the outside.
4. Drain and Dust
Remove the Funnel Cake Bites with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. While they’re still warm, dust them generously with powdered sugar. The warmth will help the sugar cling beautifully!
5. Serve and Enjoy!Consistency Matters: Your batter should be smooth but not too runny. If it’s too thick, add a little more milk, one tablespoon at a time.
Oil Temperature: Keep the oil at a steady 350°F to ensure even cooking. If the oil is too hot, the bites will brown too quickly on the outside and stay raw inside.
Small Batches: Don’t overcrowd the pan. Frying too many at once lowers the oil temperature and makes the bites greasy instead of crispy.
