Ingredients:
- For the Filet Mignon:
- 2 filet mignon steaks (about 6 oz each)
- Salt and pepper, to taste

Instructions:
- Prepare the Steaks:
- Let the filet mignon steaks sit at room temperature for about 30 minutes. Season both sides generously with salt and pepper.
- Cook the Steaks:
- In a skillet, heat the olive oil or butter over medium-high heat. When hot, add the steaks.
- Cook for about 4-5 minutes per side for medium-rare, or until your desired doneness is reached. Add fresh herbs during the last minute for flavor, if using.
- Remove the steaks from the skillet and let them rest on a plate, covered loosely with foil.
- Make the Mushroom Sauce:

- Pour in the beef broth, soy sauce, and heavy cream. Bring to a simmer and cook until the sauce thickens slightly, about 3-5 minutes. Season with salt and pepper to taste.

- Place the filet mignon on plates and spoon the mushroom sauce over the top. Garnish with fresh parsley.
