Creamy Pepper Jack Chicken & Sausage Pasta

  • 1 lb chicken sausage, sliced
  • 1 lb boneless, skinless chicken breasts, diced
  • 12 oz rotini or penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1½ cups shredded Pepper Jack cheese
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  1. Brown the sausage: In a large skillet over medium heat, heat olive oil and cook the sliced chicken sausage until browned. Remove and set aside.
  2. Cook the chicken: In the same skillet, add diced chicken, onion, garlic, Italian seasoning, salt, and pepper. Cook until the chicken is no longer pink (about 5–7 minutes).
  3. Boil the pasta: While the chicken cooks, boil pasta according to package instructions. Drain and set aside.
  4. Make the sauce: Return sausage to the skillet. Pour in chicken broth and heavy cream. Stir and bring to a light simmer.
  5. Melt in cheese: Stir in Pepper Jack and Parmesan until smooth and creamy.
  6. Combine: Add cooked pasta, toss well to coat, and heat through.
  7. Garnish & serve: Top with chopped parsley and serve hot.
