INGREDIENTS:
1 tablespoon of olive oil
1 little onion, chopped
3 pieces of minced garlic
1 pound of ground chicken or Italian sausage
4 cups of chicken broth
2 cups of thick cream
1 and a half cups of tomato sauce
8 lasagna noodles, broken into smaller parts.
1 teaspoon of Italian herbs
Add salt and pepper according to your preference.
1 cup of shredded Parmesan cheese
1 cup of grated mozzarella cheese
Fresh basil or parsley, finely chopped (for decoration)
Not required. Add as much red pepper flakes as you like.
DIRECTIONS:
First, prepare the meat.
In a big pot or a large cooking pot, warm up the olive oil on medium heat.
Put the ground chicken or Italian sausage in the pot and cook it until it turns brown, using a spatula to break it into small pieces.
If there is too much fat, remove it from the pot to avoid making the soup too oily.
Next, cook the aromatic ingredients in a pan with some oil.
Put the chopped onion and crushed garlic in the pot with the cooked meat.
Cook over medium heat for 3 to 4 minutes, until the onion is see-through and smells good. This process improves the taste and smell of the soup.
Step 3: Pour in broth and sauces.
Add the chicken broth, cream, and tomato sauce, mix well.
Add the Italian seasoning, salt, and black pepper. Taste the food and add more spices if necessary.
Heat the mixture until it starts to boil gently, so the flavors can blend.
Step 4: Prepare the pasta.
Put the broken lasagna noodles in the pot, making sure they are covered by the liquid.
Lower the heat and let it cook gently for 10 to 12 minutes until the noodles are soft but not too soft.
Step 5: Put the cheese on top.
Lower the temperature.
Add the grated Parmesan cheese and mix it until it melts and thickens the soup.
Put the grated mozzarella cheese and mix until it becomes smooth and creamy.
Step 6: Serve the soup.
Pour the soup into separate bowls.
Add some fresh basil or parsley on top of each serving to give it more color and flavor.
Add red pepper flakes for a touch of spiciness if you like.
