Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1/2 cup dried cranberries
- 1/2 cup pecans, chopped (toasted if desired)
- 1/2 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise (adjust to taste)
- 1 tablespoon Dijon mustard (optional)
- Salt and pepper to taste
- Fresh greens (for serving, optional)
Instructions:
- In a large bowl, combine the chicken, cranberries, pecans, celery, and red onion.
- In a separate small bowl, mix the mayonnaise, Dijon mustard, salt, and pepper.
- Pour the dressing over the chicken mixture and stir until everything is well coated.
- Taste and adjust seasoning as needed.
