INGREDIENTS
1 C butter softened
1/2 C shortening can also use butter
3 C sugar
4 eggs
1/2 t salt
1/2 t baking powder
3 C flour
1 C orange juice
1 bag of cranberries. I use mine frozen.
Glaze
1 1/2 C of powdered sugar
1/2 C orange juice.
DIRECTIONS
Cream butter and sugar together in a large bowl.
Beat eggs in one at a time.
Add orange juice and mix.
In a smaller bowl combine salt, baking powder, and flour. Stir together.
Add dry mixture to large bowl a little at a time till well incorporated.
Add in frozen cranberries.
Spray bunt pan very well. You can also use 2 loaf pans.
Bake cake at 350° 75 to 80 minutes.
Loaf pans 325° for 60 to 70 minutes.
Let cool in the pan for 10 minutes (bunt pan a little longer). Transfer to cooling rack.
Mix glaze until a smooth consistency and pour over cake.
