For the Pork Chops

4 boneless or bone-in pork chops (about 1/2-inch thick)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional, for a kick)

2 large eggs

1/4 cup milk

Vegetable oil (for frying)

For the Gravy

2 tablespoons pork drippings (from frying)

2 tablespoons all-purpose flour

1 1/2 cups whole milk (or as needed for consistency)

Salt and pepper, to taste


Instructions

1. Prepare the Pork Chops:

Pat the pork chops dry with paper towels. Season lightly with salt and pepper on both sides.

In one shallow dish, combine flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

In a second shallow dish, whisk together eggs and milk.

2. Bread the Pork Chops:

Dip each pork chop in the flour mixture, coating evenly.

Then dip into the egg mixture, letting any excess drip off.

Return to the flour mixture, pressing firmly to create a thick, even coating.

3. Fry the Pork Chops:

Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.

Once the oil is hot (about 350°F or until a small piece of flour sizzles when dropped in), carefully add the pork chops.

Fry for 4-5 minutes per side, or until golden brown and cooked through (internal temperature of 145°F).

Remove and place on a wire rack or paper towels to drain. Reserve about 2 tablespoons of drippings for the gravy.

4. Make the Gravy:

In the same skillet, whisk 2 tablespoons of the reserved drippings with 2 tablespoons of flour. Cook over medium heat, stirring constantly, until golden brown (about 2 minutes).

Gradually whisk in the milk, scraping up any browned bits from the pan for extra flavor.

Simmer for 4-5 minutes, stirring, until thickened. Season with salt and pepper to taste. If the gravy is too thick, add more milk a tablespoon at a time until desired consistency is reached.

5. Serve:

Place the fried pork chops on a serving platter and generously spoon the gravy over them.

Pair with mashed potatoes, green beans, or buttermilk biscuits for a complete meal.
