INGREDIENTS:
1 ½ cups all-purpose flour
1 cup granulated sugar
1 ½ tsp baking powder
1 tsp cinnamon
½ cup buttermilk
1/3 cup vegetable oil
2 large eggs
2 tsp vanilla extract
1 ½ cups chopped apples
½ cup brown sugar
2 tsp ground cinnamon
DIRECTIONS:
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a bowl, mix flour, granulated sugar, baking powder, and 1 tsp cinnamon.
In another bowl, whisk together buttermilk, oil, eggs, and vanilla.
Combine the wet and dry ingredients. Fold in the chopped apples.
Pour half of the batter into the pan. Mix brown sugar and 2 tsp cinnamon, and sprinkle half over the batter.
Pour the remaining batter and top with the rest of the cinnamon sugar.
Use a knife to swirl the cinnamon sugar through the batter.
Bake for 50-60 minutes or until a toothpick inserted comes out clean.
