Ingredients:
Crust:
1 cup graham cracker crumbs
4 tbsp melted butter
1/4 cup sugar
1 tsp cinnamon
Cheesecake Filling:
16 oz cream cheese, softened
1 cup sugar
1 tsp vanilla extract
2 large eggs
Cinnamon Sugar Topping:
1/4 cup sugar
2 tsp cinnamon
Directions:
Prepare the Crust:
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the graham cracker crumbs, melted butter, sugar, and cinnamon. Press the mixture firmly into the bottom of a baking dish to form the crust.
Make the Cheesecake Filling:
In another bowl, beat the softened cream cheese and sugar until smooth. Add the vanilla extract and eggs, beating until well combined.
Pour the cheesecake filling over the prepared crust, spreading it evenly.
Add Cinnamon Sugar Topping:
In a small bowl, mix the sugar and cinnamon for the topping. Sprinkle this mixture generously over the cheesecake filling.
Bake:
Bake the cheesecake bars for 25-30 minutes or until the filling is set. Remove from the oven and allow to cool, then refrigerate for at least 2 hours to fully set.
