Cajun Chicken Sloppy Joes

INGREDIENTS 

• 1 lb (450g) ground chicken
• 1 tbsp olive oil
• 1 small onion, finely diced
• 1 small green bell pepper, finely diced
• 2 garlic cloves, minced
• 1 tbsp Cajun seasoning
• 1/2 tsp smoked paprika
• 1/4 cup ketchup
• 2 tbsp tomato paste
• 1/3 cup chicken broth
• 1 tbsp Worcestershire sauce
• 1/4 cup heavy cream
• 4 slices pepper jack cheese
• 4 brioche buns, lightly toasted
• Optional: Fresh parsley for garnish

DIRECTIONS 

1. Cook the chicken: Heat olive oil in a large skillet over medium heat. Add ground chicken and cook until browned, breaking it up with a wooden spoon (about 5–7 minutes). Remove from the skillet and set aside.
2. Sauté the veggies: In the same skillet, sauté diced onion and green bell pepper until softened, about 4 minutes. Stir in minced garlic, Cajun seasoning, and smoked paprika. Cook for another 1 minute until fragrant.
3. Build the sauce: Add ketchup, tomato paste, chicken broth, and Worcestershire sauce. Stir to combine and simmer for 3–4 minutes. Return the chicken to the skillet and mix thoroughly.
4. Make it creamy: Lower the heat and stir in heavy cream. Let the mixture simmer gently until thickened, about 3–5 minutes.
5. Assemble the Sloppy Joes: Place a slice of pepper jack cheese on the bottom of each toasted brioche bun. Spoon the Cajun chicken mixture over the cheese and top with the other half of the bun. Garnish with parsley if desired.
