Ingredients:
3/4 cup dark brown sugar
1/3 cup self-rising flour
Dash of salt
4 egg yolks
1 can evaporated milk
1/2 cup water
1/2 stick salted butter or margarine
1 tsp vanilla extract
Instructions:
In a bowl, whisk together the flour, sugar, and a dash of salt. Add the evaporated milk, water, and egg yolks, and whisk thoroughly.
Microwave the mixture on high for 3 minutes. Remove, whisk well (especially along the bottom), and return to the microwave.
Cook for another 2 minutes on high. Remove, then stir in the butter and vanilla until smooth.
Pour the mixture into a pre-baked 9-inch or 8-inch deep-dish pie crust. Refrigerate until set.
Whipped Cream Topping:
16 oz heavy whipping cream
1/2 cup powdered sugar
Optional: pinch of nutmeg
Beat the whipping cream with powdered sugar until soft peaks form. Add a pinch of nutmeg for extra flavor, if desired.
Store whipped cream in the refrigerator and serve it on top of the chilled pie.
