Ingredients:
4 slices of halal bologna
4 slices of bread (white or whole wheat)
2 tablespoons butter
4 slices of cheddar cheese (or your favorite cheese)
1 tablespoon mayonnaise (optional)
1 teaspoon Dijon mustard (optional)
Directions:
Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Allow it to melt and coat the pan evenly.
Place the slices of bologna in the skillet and fry for 2-3 minutes on each side, or until they develop a golden-brown color with crispy edges. Remove and set aside.
In the same skillet, melt the remaining butter. Place two slices of bread in the pan and toast one side until lightly browned.
Flip the bread and layer one slice of cheese, a slice of fried bologna, and another slice of cheese on the toasted side of each piece. Top with the remaining slices of bread, toasted side facing inwards.
Cook the sandwiches for 2-3 minutes on each side, pressing down gently with a spatula, until the bread is golden and crispy and the cheese has melted.
Remove the sandwiches from the pan. Optionally, spread a thin layer of mayonnaise and Dijon mustard on the inside of the bread before assembling for extra flavor. Slice in half and serve immediately.
