Ingredients:
– 1 lb ground beef
– 1 small onion (chopped)
– 2 cloves garlic (minced)
– 1 tablespoon taco seasoning (or to taste)
– 1 can (15 oz) black beans (drained and rinsed)
– 1 cup corn (frozen or canned)
– 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
– 4 large flour tortillas
– 1 cup salsa (divided)
– Salt and pepper to taste
– Fresh cilantro (for garnish, optional)
Instructions:
1. Cook the Beef:
– In a large skillet over medium heat, add the chopped onion and sauté until softened, about 2-3 minutes.
– Add minced garlic and ground beef. Cook until the beef is browned, about 5-7 minutes. Drain excess fat.
2. Season the Mixture:
– Stir in taco seasoning, black beans, corn, and half of the salsa. Cook for another 2-3 minutes to heat through. Season with salt and pepper to taste.
3. Assemble the Burritos:
– Lay a tortilla flat and spoon about 1/4 of the beef mixture in the center. Top with a generous sprinkle of shredded cheese.
– Fold the sides of the tortilla in, then roll it up from the bottom to create a burrito shape.
4. Cook the Burritos:
– In the same skillet, place the burritos seam-side down. Cook for about 2-3 minutes on each side, or until golden brown and slightly crispy. You can also use a panini press for a crispy exterior.
5. Serve:
– Slice the burritos in half and place on a plate. Drizzle with remaining salsa and sprinkle with fresh cilantro if desired.
