Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil (or melted butter)
- 2 large eggs
- 1 teaspoon vanilla extract
Optional Mix-Ins
- 1 cup of your choice (chocolate chips, blueberries, chopped nuts, or dried fruit)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Mix Wet Ingredients: In another bowl, combine the milk, oil, eggs, and vanilla extract. Whisk until well blended.
- Combine: Pour the wet ingredients into the dry ingredients. Stir gently until just combined; be careful not to overmix. If using mix-ins, fold them in at this stage.
- Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake: Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden.
- Cool: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
