Ingredients:
- 4 medium-sized potatoes
- 4 cloves of garlic, chopped
- 50g melted butter
- 50ml vegetable oil
- Salt to taste
- 1 tablespoon minced basil (or oregano, depending on preference)
Instructions:
Step 1: Prepare the Potatoes
- Preheat the Oven: Set your oven to 392°F (200°C).
- Clean the Potatoes: Wash the potatoes thoroughly, scrubbing off any dirt.
- Slice the Potatoes: Cut the potatoes lengthwise, but don’t slice all the way through—leave the ends intact.
Step 2: Add the Garlic
- Prepare the Garlic: Thinly slice the garlic cloves.
- Stuff the Potatoes: Carefully insert a few slices of garlic into the slits of each potato.
Step 3: Prep the Foil and Bake
- Prepare the Foil: Create individual foil boats or cups for each potato using aluminum foil.
- Place the Potatoes: Set each potato in its foil boat on a baking sheet.
Step 4: Make the Butter and Oil Mixture
- Melt the Butter: In a small bowl, mix the melted butter with the vegetable oil.
- Add Seasonings: Stir in the minced basil (or oregano) and a generous amount of salt.
Step 5: Bake the Potatoes
- Brush the Potatoes: Generously brush each potato with the butter-oil mixture. Pour any remaining mixture over the potatoes.
- Bake: Bake in the preheated oven for 50 minutes or until the potatoes are tender and golden brown.
- Cool Slightly: Let the potatoes cool slightly before serving. Serve hot or plate them as a delicious side dish.
