Ingredients:

  • 4 medium-sized potatoes
  • 4 cloves of garlic, chopped
  • 50g melted butter
  • 50ml vegetable oil
  • Salt to taste
  • 1 tablespoon minced basil (or oregano, depending on preference)

Instructions:

Step 1: Prepare the Potatoes

  1. Preheat the Oven: Set your oven to 392°F (200°C).
  2. Clean the Potatoes: Wash the potatoes thoroughly, scrubbing off any dirt.
  3. Slice the Potatoes: Cut the potatoes lengthwise, but don’t slice all the way through—leave the ends intact.

Step 2: Add the Garlic

  1. Prepare the Garlic: Thinly slice the garlic cloves.
  2. Stuff the Potatoes: Carefully insert a few slices of garlic into the slits of each potato.

Step 3: Prep the Foil and Bake

  1. Prepare the Foil: Create individual foil boats or cups for each potato using aluminum foil.
  2. Place the Potatoes: Set each potato in its foil boat on a baking sheet.

Step 4: Make the Butter and Oil Mixture

  1. Melt the Butter: In a small bowl, mix the melted butter with the vegetable oil.
  2. Add Seasonings: Stir in the minced basil (or oregano) and a generous amount of salt.

Step 5: Bake the Potatoes

  1. Brush the Potatoes: Generously brush each potato with the butter-oil mixture. Pour any remaining mixture over the potatoes.
  2. Bake: Bake in the preheated oven for 50 minutes or until the potatoes are tender and golden brown.
  3. Cool Slightly: Let the potatoes cool slightly before serving. Serve hot or plate them as a delicious side dish.
