Ingredients
Graham Cracker Crust

2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
1/2 teaspoon cinnamon

Apple Pie Filling

4 large apples (Granny Smith), peeled and thinly sliced
1/4 cup butter
1/2 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 tablespoon cornstarch
2 tablespoons lemon juice
1/4 cup water

Cheesecake Layer

24 oz (3 packages) cream cheese, softened
1 cup granulated sugar
3 large eggs
1/4 cup heavy cream
2 teaspoons vanilla extract
1/4 cup sour cream

Topping

1 pie crust (homemade or store-bought)
1 egg (for egg wash)
Caramel sauce for drizzling
Powdered sugar for dusting

Instructions


Prepare the Crust

Preheat oven to 325°F (165°C)
Mix graham cracker crumbs, melted butter, sugar, and cinnamon
Press mixture into the bottom and up sides of springform pan
Bake for 10 minutes, then cool completely

Make Apple Filling

In a saucepan, melt butter over medium heat
Add apples, brown sugar, cinnamon, and nutmeg
Cook for 5-7 minutes until apples start to soften
Mix cornstarch with water and lemon juice
Add to apple mixture and cook until thickened (2-3 minutes)
Cool completely

Prepare Cheesecake

Beat cream cheese and sugar until smooth (3-4 minutes)
Add eggs one at a time, mixing well after each
Mix in heavy cream, vanilla, and sour cream until just combined
Don’t overmix

Assembly and Baking

Wrap outside of springform pan with foil
Pour half the cheesecake batter over crust
Carefully spoon cooled apple filling in the center, leaving a 1-inch border
Pour remaining cheesecake batter over apples
Roll out pie crust and cut into strips for lattice
Create lattice pattern on top
Brush with egg wash
Place in water bath and bake for 75-85 minutes until center is almost set
Turn off oven, crack door, let cool for 1 hour
Refrigerate for at least 6 hours or overnight

Final Touches

Before serving, drizzle with caramel sauce
Dust with powdered sugar
Serve chilled
