Ingredients:
Taco Shells:
Small flour tortillas
Cinnamon sugar
Melted butter
Cheesecake Filling:
1 cup cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 cup whipped cream
Apple Topping:
2 apples, peeled and diced
2 tbsp butter
2 tbsp brown sugar
1/2 tsp cinnamon
A pinch of nutmeg (optional)
Instructions:
1. Prepare the Taco Shells:
Preheat the oven to 400°F (200°C).
Brush the tortillas with melted butter and sprinkle with cinnamon sugar.
Drape them over the oven rack to form a taco shape and bake for 5-7 minutes or until golden and crisp. Let them cool.
2. Make the Cheesecake Filling:
In a bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the whipped cream and set aside.
3. Cook the Apple Topping:
In a pan over medium heat, melt the butter and add the diced apples, brown sugar, cinnamon, and nutmeg.
Cook until the apples are tender and the mixture is caramelized, about 5 minutes. Let it cool slightly.
4. Assemble the Tacos:
Spoon or pipe the cheesecake filling into each taco shell and top with the warm apple mixture.
Garnish with a drizzle of caramel sauce or whipped cream if desired.
Enjoy your apple cheesecake tacos!
